Eggless Banana bread

I got this recipe from Cook With Love and must say this was my best experience with a recipe tried for the first time! The banana bread came out perfect, in fact DH and I kept comparing it to the Banana Walnut loaf that Starbucks sells :). Believe me, it WAS that good!

The crust has a slight crisp texture and the inside was soft and moist! Since I had 2 bananas, I scaled the recipe to 2/3rd and that seemed to suffice for 2+ persons.

Ingredients

  • 1 cup sugar
  • 3 bananas
  • 4 tbsp melted unsalted butter
  • 2 tbsp yogurt
  • 1 and 1/2 cup all purpose flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/4 cup milk
  • 1/2 cup chopped walnuts (optional), I’d 1/4 cup and that seemed fine.

Method

  1. Pre Heat oven to 350 degree Fahrenheit
  2. Mash the bananas.
  3. Add sugar and yogurt to it.
  4. Add butter, salt, and flour. Mix well.
  5. Add Baking Soda, milk, vanilla essence and walnuts. Stir till everything is well blended.
  6. Pour this batter in a greased bread tin and bake for about 50-60 minutes or till a tooth pick inserted comes out dry.

Great recipe! Moist yet light, very flavorful through and through.

I added a crispy top crust of 1/4C oats, 1/4C brown sugar and 1/4tsp cinnamon which made for a great crunchy intro to the great flavor. Thanks!

Hi Nidhi,I wish I could help you there but I haven't tried any other eggless recipe that I liked. If I come across anything good I'll let you know.

Tried your recipe this weekend... Thanks!!
It turned out soooo good. Really moist and tasty.
Glad I didn't have to use eggs.
I used half the sugar because I ran out. I thought it was just fine this way. Not too sweet but def sweet enough. I also poured a little maple syrup on top and mushed it in before I baked it which also was nice.

Thanks TraceJ! That is a revelation - I didn't know it would taste good with even half the sugar. I think it was a good idea to pour some maple syrup - it compensated for the less sugar.

Smriti the recipe sounds very good. I am going to try it out.
I dont understand the 3 bananas Because bananas come in all sizes. Could you please tell me in cup measure like 2 cups / 3 cups of mashed banana.

Hi Rohini, I would say a mashed banana would be around half a cup so 3 should be 2.5 cups. However a little bit here and there doesn't really matter so don't worry about being precise.

Hi Smriti, I have made your banana bread four times so far, and each time it has disappeared without a trace in about fifteen minutes, and on two occasions, my husband complained that he didn't even get one bite! Thank you for an excellent recipe!
